Grab your baskets and your blankets because it’s National Picnic Month (AKA it’s summer guys, just get out there). Nothing says dining al fresco in Britain than a sausage roll, but the recipe for honey and mustard sausage rolls below is so incredibly good you’ll want to make them all the time. The same goes for sandwiches, as long as they’re not soggy. Sometimes you dream about sandwiches, hoping they’ll be as delicious as you dreamed. Well, the mortadella, pesto, burrata focaccia sandwich with garlic confit aioli one below is. It has crisp pesto focaccia, pesto, burrata, mortadella, rocket and a homemade garlic confit aioli. Don’t forget dessert! These elderflower and raspberry jellies are so easy to make, transport and, most importantly, devour. Honey and mustard sausage rolls These honey and mustard sausage rolls are so incredibly good you’ll want to make them all the time. We’re using Asda’s Extra Special Orange Blossom Honey sourced from bees that feed on orange blossom in Spain and Mexico giving it a sweet citrus scent. Stirred into the filling and mixed with some fresh thyme to drizzle over the hot pastry when they come out of the oven. Just heaven! Serves: 6-8 Prep time: 35 minutes | Cook time: 25-30 minutes Ingredients: For the filling: 1 pack of Asda’s Extra Special Cumberland Sausages 1 heaped tbsp grainy mustard 1 tbsp Asda Honey Blossom Honey 2 tbsp chopped parsley Salt and pepper 1 sheet ready rolled puff pastry 1 egg, beaten Sprinkle of sesame seeds For the drizzle: 5 sprigs of thyme, leaves only 1 tbsp honey For the dip: 3 tbsp mayonnaise 1 tbsp grainy mustard Method: Preheat the oven to 200C. Line a baking tray with parchment. Remove the sausages from their skins and place the sausage meat in a bowl. Add the mustard, honey, parsley and season well. Stir to combine. Place the pastry on a board and cut in half lengthways. Divide the pork mixture in two. Place one portion of the meat on the long edge of one piece of pastry and shape into a sausage roll shape, pinching the seam and rolling it over so the seam is underneath. Repeat with the other roll. Brush with some beaten egg. Slice into portions and scatter with sesame seeds. Place on a baking tray and bake for 25-30 mins until golden and cooked through. For the drizzle, heat the honey gently in a pan for a minute and add the chopped thyme. Drizzle over the hot sausage rolls just before serving and serve with the mustard mayo dip. Enjoy! Mortadella, pesto, burrata focaccia sandwich with garlic confit aioli Sometimes you dream about sandwiches, hoping they’ll be as delicious as you dreamed. Well, this one is. Serves: 1 Prep time: 15 minutes Ingredients: For the garlic confit aioli: 10 garlic confit cloves 1 cup garlic confit olive oil 1 tbsp lemon juice 1 egg Pinch of flakey sea salt For the sandwich: 2 slices pesto focaccia 1 x burrata 4 tbsp green basil pesto 75g Italian mortadella 25g wild rocket Method: Make the garlic confit aioli: Place all ingredients into a glass container or jug that is just wide enough to fit a hand blender. Blend all ingredients together while slowly incorporating all of the oil. Continue until you have a thick consistency. Store in an airtight container or jar in the fridge for up to 3 days. Assemble the sandwich: Cut your focaccia into thirds lengthways. Slice 1 piece of the focaccia in half. Drizzle cut side with olive oil and toast in a pan until golden. Assemble your sandwich by beginning with a layer of the garlic aioli, a spoon of pesto, followed by slices of the mortadella, burrata, torn in two, and rocket, finished with a pinch of salt and pepper. Top with the other half of the focaccia and cut in half. Enjoy! Elderflower and raspberry jellies These elderflower and raspberry jellies were always on the menu when I catered for parties and people always chose them. They were so popular, and they’re so easy to make. Serves: 6 Prep time: 15 minutes | Cooling time: 4 hours overnight Ingredients: 8 sheets leaf gelatin 350ml elderflower cordial 1 punnet raspberries Cream or ice cream (to serve) Method: Soak the gelatin in cold water for a few minutes, then drain. Pour 100ml of boiling water over the gelatin and stir to fully dissolve. Allow to cool for a couple of minutes, then stir in the elderflower cordial and 250ml of cold water. (I always wet the inside of the jelly mould if I’m planning on turning the jellies out afterwards before I add the jelly mixture). Divide the raspberries into glasses or ramekins or a large glass bowl and pour over the liquid. Cover and put in the fridge to set for at least 4 hours-it works best if left overnight. (If you want the berries to be suspended in the jellies, pour a third of the mixture into the moulds and set in the fridge, then add the berries so they lie on top of the set layer and pour over the remaining mixture). To remove from the mould, if using, dip the bottom briefly into a bowl of hot water, cover with a slightly larger plate and with one confident movement, invert the mould so that the jelly lands neatly onto the plate. Serve the jelly with cream or ice cream. Lindsay Lohan has given birth to her first child, a son named Luai, according to reports. On Monday 17 July, Page Six reported that a representative for Lohan, 37, had confirmed the Freaky Friday star and her husband Bader Shammas had welcomed their first child together. “The family is over the moon in love,” her representative said in a statement to the outlet. According to Page Six, Lohan and Shammas’ son was born in Dubai, where the couple lives. The exact date of the baby’s birth is unknown. As for the name the couple chose for their son, the baby’s name, which is a popular Arabic name for boys, means strong and steady, or shield or protector. The Independent has contacted a representative for Lohan for comment. The baby news comes after Lohan celebrated her son’s impending arrival with a recent look at the infant’s beach-themed nursery. In photos shared this week, the actress showed off the nursery, which included a wall painted with a beach mural and a nautical-themed crib. Lohan first announced that she was expecting her first child in March, when she shared a photo of a “coming soon” onesie. “We are blessed and excited,” she wrote in the caption. In April, Lohan shared photos from her baby shower, which was attended by friends and family. “Good times. So grateful for all of the wonderful people in my life,” she captioned the photos. Lohan opened up about becoming a mother during an interview with Allure in June, where she revealed that she couldn’t wait to become a parent. “I can’t wait to see what the feeling is and what it’s like to just be a mom,” Lohan said. “Happy tears. A woman has credited Kim Kardashian’s shapewear line Skims for saving her life during a shooting. The 42-year-old Skims founder took to her Instagram Story on Friday 14 July to share a TikTok from Angelina Wiley, a 22-year-old Kansas City resident who survived a mass shooting in Kansas City, Missouri, earlier this year. The TikTok, which was posted on 18 May, went viral this week with more than 1.4m views as fellow TikTokers tagged Kardashian in the hopes that she would see the video. “Kim Kardashian saved my life,” Wiley began the clip. She explained that she was shot “four times” during an incident that occurred on New Year’s Day, according to CBS affiliate KCTV5. “The night that I got shot, under my dress I was wearing a Skims shaping bodysuit,” she said. “It was so tight on me that it literally kept me from bleeding out.” “I recommend it,” Wiley jokingly added. “I’m definitely going to buy some more, I mean I should wear it everyday. Today show star Jill Martin has been diagnosed with breast cancer. On 17 July, the 47-year-old lifestyle contributor revealed on Today that she had been diagnosed with breast cancer, just one week after she tested positive for the BRCA gene – inherited gene mutations that can increase the risk of developing breast cancer. In an essay shared to Today.com, the TV presenter explained that she learned of her diagnosis on 26 June. Her doctor had recently suggested she get genetic testing due to her family history with breast cancer, which revealed she had tested positive for the BRCA2 gene. Martin elected to undergo preventive bilateral mastectomy, because she had a 60 to 90 per cent chance of developing breast cancer. However, less than a week later, an MRI scan revealed that she had already developed breast cancer. “I am telling this story now because I couldn’t go through months of operations, and start to recover both physically and mentally, without shouting from the rooftops telling everyone to check with their doctors to see if genetic testing is appropriate,” Martin wrote in her essay. The BRCA genes – an abbreviation for “BReast CAncer gene” – are two different genes that have been found to impact a person’s chances of developing breast cancer. There are two BRCA genes, BRCA1 and BRCA2, which normally help repair DNA breaks that can lead to certain cancers. However, when there is a mutation in the BRCA gene, it can no longer be effective in preventing breast cancer. According to the National Breast Cancer Foundation, the carrier of the mutated gene can also pass a gene mutation down to their offspring. It’s been found that people with a BRCA1 or BRCA2 mutation have a higher risk of being diagnosed with breast cancer. It’s estimated that 55 to 65 per cent of women with the BRCA1 mutation will develop breast cancer before age 70, while approximately 45 per cent of women with a BRCA2 mutation will develop breast cancer by age 70. Martin revealed that she will be having a double mastectomy, which will then determine her treatment plan moving forward. After her surgery, she also plans on having her ovaries and fallopian tubes as part of the preventative surgery process, because her chances of getting ovarian cancer are now 20 per cent higher, Martin said. “By the time I recover from my first surgery, I hope that many of you will know your results and can make proactive decisions with your doctors, families and loved ones,” she said. “That is the silver lining to this mess for me. It is what is keeping me going and giving me strength.” The Today show contributor explained that, although she had a clear mammogram test back in January, her mammogram still missed the presence of breast cancer that was later picked up by the MRI scan. “I am talking about this not to scare you, but to raise awareness so that maybe you can be tested and identify a BRCA or other genetic mutation earlier,” Martin wrote. “If I had known I was BRCA positive, I would have gotten screened more regularly, with an MRI alternating with my mammograms.” “What I didn’t know before this experience was that an MRI can pick up cancers that mammograms miss,” she continued. “So while my mammograms missed the presence of breast cancer, an MRI might have helped me catch it earlier.” Mammograms miss one in eight breast cancers, according to the American Cancer Society. For those who test positive for the BRCA gene, the American College of Obstetricians and Gynecologists recommendeds screening for breast cancer with an MRI starting at age 25, and mammograms at age 30. Martin added that earlier testing might have allowed her “the opportunity to have preventative surgery,” she said, “which is something I had planned to do only days before I found out that I actually had cancer.” She wrote: “Different people cope in different ways; for me, I am not hiding under the covers crying.
