Midweek comfort food: Singaporean curry sauce and rice
There’s a meal in Singapore called ‘scissors-cut rice’, a selection of dishes piled high over a plate of lovely fluffy rice and topped with curry sauce,” says chef Jeremy Pang. “Originating from Hainanese Chinese descendants, the dish can be seen as a cross between a Malaysian nasi lemak and a Japanese katsu curry.” Curry sauce and rice Serves: 2 Ingredients: 2 cups of jasmine rice 2 cups of water 1 onion, finely diced ½ thumb-sized piece of ginger, peeled and finely chopped 2 garlic cloves, finely chopped 3 green chillies, pierced with the tip of your knife 1 potato, peeled and cut into 5cm chunks 300ml chicken stock 200g okra (swapsies: green beans), cut into 3-4cm lengths Vegetable oil For the sauce: 150ml coconut milk 1 tbsp sambal (swapsies: chilli bean sauce/toban jiang) 1 tbsp light soy sauce ½ tsp salt For the spices: 2 star anise 1 cinnamon stick 1½ tbsp curry powder Method: 1. Wash the rice at least three times. Place in a bowl and run under cold water, gently moving the rice grains between the tips of your fingers. Pour the rice through a sieve in between each wash, until the water runs clear. Sieve one last time and set aside. 2. Mix the sauce ingredients together in a jug. 3. Build your wok clock: start at 12 o’clock with the rice, followed by the onion, ginger and garlic, the spices, green chillies, potato, the sauce, chicken stock and lastly the okra. 4. Place the rice in a saucepan with the measured water. Cover with a tight-fitting lid, place on a medium-high heat and bring to a vigorous boil. Then reduce the heat to low and simmer with the lid on for 12-15 minutes until the liquid has evaporated to the point where you start to see air pockets form in between some of the rice grains. Replace the lid, turn the heat off and leave the rice to sit for another 15 minutes or so until ready to serve. 5. Once the rice is cooking, heat one to two tablespoons of vegetable oil in a saucepan to a medium heat, add the onion and fry for two to three minutes. Add the ginger and garlic and fry for a minute or so. Then add all the spices together, the green chillies and potato in turn, frying for about a minute after each addition. Pour in a quarter of the sauce and bring to a vigorous boil. Add another quarter of the sauce and again bring to a boil, then repeat this process until all the sauce has been added. Bring to a boil once again, pour in the chicken stock and cook on a medium heat for 20 minutes. Bayern Munich sign two huge names amid Kane transfer saga
Bayern Munich might be on the verge of buying England captain Harry Kane in a sensational €100m deal – but it has just made two very different signings. The German football club has just announced that Prime, the energy drink created by YouTube personality KSI and Logan Paul, is its “hydration sponsor”. The multi-year deal will see Prime Hydration sold at the Allianz Arena on match days, and the brand plans to expand retail operations in the German market later in the year and launch FC Bayern X Prime limited edition bottles. The Prime website and Prime Energy label both warn that the drink is not recommended for children under age 18, people sensitive to caffeine, pregnant women or women who are nursing. US Senate Majority Leader Chuck Schumer even called on regulators to investigate the company. The drink brand has become so popular, particularly with children and teenagers, that they are often being sold for 10 times their retail price on eBay. There is now even a tracker app that allows customers to verify stock before visiting stores. On Twitter last year, KSI – real name Olajide Olayinka Williams Olatunji – added that the beverage was being sold on the “black market”. The YouTuber shared screenshots of bottles being sold for £15 on eBay and said: “This annoys me so much. We’re trying so hard to increase the supply as much as possible to try and combat the black-market selling. “Me and Logan ain’t made any money from Prime. How much water should we be drinking in a day?
A majority of the human body is made up of water, which is why staying hydrated so important. It can be confusing to determine how much the average person should drink in a day, especially in situations like when it’s hot outside or when you’re exercising. There are even consequences to not drinking the right amount of water, such as dehydration or overhydration. The National Health Service (NHS) typically recommends drinking between six to eight glasses of fluid, including water, every day. But the US National Academies of Sciences, Engineering, and Medicine has determined that an adequate daily fluid intake is 15.5 cups (3.7 litres) per day for men and 11.5 cups (2.7 litres) per day for women. However, this fluid intake accounts for drinking plain water as well as other beverages and food that contain water, like fruits and vegetables. The amount of water one should be drinking each day can also vary depending on the situation. According to the Mayo Clinic, those who are working out should be drinking extra water before, during, and after a period of exercise. This especially goes for any activity that makes you sweat, because drinking water helps replenish the fluid your body lost. People in hot or humid weather should be drinking more water than usual because of how much they’re sweating, which contributes to fluid loss. Meanwhile, in areas with higher altitudes like the mountains, dehydration can become more common. The Mayo Clinic suggests that people lose bodily fluids when they have a fever, are vomiting, or have diarrhoea. As such, it’s important that people are consuming extra water when they’re sick. Other conditions that might require increased fluid intake include bladder infections and urinary tract stones. Feeling thirsty and passing dark-coloured, strong-smelling urine are some of the initial signs that you could be dehydrated. Other symptoms include feeling sluggish, feeling light headed, or having a dry mouth. Drinking milk, water, and fruit juice is also a good way to maintain hydration. However, people should bear in mind the amount of sugar that can be contained in sweetened drinks. Tea and coffee may also help with hydration, though people should try to keep track of how much caffeine they’re consuming. While it’s important to know whether you’re drinking enough water, the Mayo Clinic suggests it’s likely that nothing is wrong with someone’s water intake if they rarely feel thirsty and their urine is clear, or a light yellow colour. It is possible to drink too much, however, it’s rarely a problem for someone with healthy kidneys. Still, overhydration can occur when the body retains or collects too much water. Some athletes who participate in endurance events, especially marathon runners, can be prone to taking on too much fluid. This can lead to water intoxication and dangerously low sodium levels, which is referred to as hyponatraemia. In order to help the body to relieve itself of excess water, as well as relieve pressure on the heart and other organs, doctors may prescribe diuretics or water tablets that promote the production of urine.
