With several UK-grown courgette varieties now at their most abundant, we wanted to share some of our favourite at-home recipes for dishing up the best of this season’s courgette harvest. Best enjoyed between the months of June and October, courgettes are the perfect vehicle for taking your cooking from summer into autumn. A versatile yet budget-friendly staple, they are equally delicious served raw, fried, roasted or even in cake. So, from comforting courgette fritto, courtesy of Brighton’s Tutto, to Acme Fire Cult’s grilled trombetta courgettes (elevated with the addition of a vadouvan butter) there’s something for everyone. Courgette fritto Recipe from: Tutto ,Brighton Ingredients: 6 large green courgettes Squeezy honey Grated pecorino Fresh rosemary Lemon wedges Salt and pepper Extra flour for dusting For the batter: 200g gluten-free self-raising flour 320g water 2g ground cumin 2g onion powder 2g salt Equipment: Deep fryer (or deep frying pan and a thermometer) Method: Using a bowl and whisk, mix all the dry ingredients for the batter. To prevent lumps, add half the water to create a smooth slurry, then add the rest and whisk to an even consistency. Slice the courgettes at an angle into long discs approximately 3-5mm thick. Set the deep fryer to 180C. Dust the courgettes lightly with some extra gluten-free flour and shake off the excess. Submerge in the batter, drip off the excess, and gently fry for 45 seconds on each side. Once golden brown, drain onto paper towel. To finish, arrange onto a plate, drizzle with honey and season with salt and pepper, sprinkle with grated pecorino and chopped fresh rosemary. Serve with a lemon wedge. Grilled trombetta courgettes with vadouvan butter Recipe from: Daniel Watkins, chef and co-founder at Acme Fire Cult, London Serves: 4 Ingredients: For the courgettes: 4 trombetta courgettes For the vadouvan butter (makes a portion for 8; freeze half): 400g dairy-free butter 220g shallots 11g madras curry powder 11g turmeric 6g each of the following: Fennel seeds Cumin seeds Salt Cardamom Black Peppercorns Mustard seeds Red chilli, finely diced 3 garlic cloves, minced Peel of 1 orange 2 inch ginger finely chopped For the chickpea purée: 800g tinned chickpeas 5 tbsp olive oil 2 bay leaves 1 tsp thyme leaves Juice of half a lemon Confit garlic (optional) For the tofu whip: 1 pack silken tofu Juice of 1 lemon Salt Method: For the trombetta courgettes: Simply wash and cut down into the desired portion size. Add a little olive oil and seasoning. Grill all sides until they start to soften, depending on temperature of fire. Trombettas lend themselves really well to live flames. For the vadouvan butter: Sweat down shallots and all the other ingredients, cook out slowly (without colour) for approximately 2-3 hours. Take off the heat and let it stand for 30 minutes. Once the mix has cooled a little, place the mix in a high speed blender until smooth. Taste, check the seasoning and add a little salt. This can be frozen and makes for a great accompaniment for most vegetables but particularly works well with the courgettes. For the chickpea purée: Boil the chickpeas in a pan of water with the bay leaves and thyme (approximately 30 mins). Drain the chickpeas, keeping back 2 tablespoons of the cooking water and discard the bay leaves. In a blender, purée the beans to a soft cream with the reserved cooking liquid and the olive oil, then squeeze in the lemon and salt to taste. At this stage, add more lemon juice, olive oil or confit garlic, if you like. For the tofu whip: Blend all ingredients in Thermomix, until smooth and cream-like. Store in a squeezy bottle. To finish: On a plate, take a generous amount of chickpea puree on to the center of the plate, place the grilled courgettes in the center. Spoon over generous amount of butter. To finish, add some tofu whip or creme fraiche. Whole roasted courgette with manouri cheese, tabbouleh and basil sauce Recipe by: Fionnan Flood, head chef at The Chelsea Pig, London Serves: 2 Ingredients: 1 yellow courgette 100g freekeh (cracked wheat) 1 plum tomato 50g Manouri cheese (a Greek cheese that’s creamier than feta) 1 bunch basil 20g confit garlic 5g capers Olive oil Chives Parsley Lemon juice and zest Micro basil (for garnish) Method Top and tail your courgette then finely crosshatch score the inside flesh before putting aside. Boil (blanch) the freekeh in heavily salted water until tender and leave aside to cool down – ideally spread out onto a tray to speed the cooling process. Finely chop the chives and parsley, and also finely dice the flesh from the tomato (leaving aside the seeds). Make your basil sauce by blitzing in a food processor: basil, olive oil, confit garlic and capers – blending until smooth then adjusting the seasoning to taste. Now, assemble the tabbouleh – mixing the freekeh, chopped herbs and tomatoes. Next, add lemon juice and zest to taste, alongside seasoning (salt and pepper). In a frying pan on medium heat, place your courgette flesh side down, and colour it until golden brown. Place the pan in the oven for about 5 minutes at 180C until cooked through. For plating: place the basil sauce on the bottom on the dish (feel free to express yourself here), then add a few piles of tabbouleh around then place your courgette on top. Crumble some manouri cheese over, and add your micro basil (optional for garnish/presentation) . Samantha Womack has said she would’ve delayed her own cancer treatment in solidarity with striking NHS staff who “shouldn’t be eating from food banks”. The former EastEnders actor, 50, announced she had been diagnosed with “brutal” breast cancer in August last year – shortly after Dame Olivia Newton-John died from the disease. Last December, NHS doctors and nurses went on a nationwide strike demanding better pay amid a cost-of-living crisis and rising inflation. Describing herself as a “huge advocate” of England’s national health service, she called it “one of the best gifts we have” in an interview with Press Association. She added: “But when you’ve got the people who are working as hard as they are doing the hours they are, not being supported, even if it would have delayed my own personal treatment, “I would have been out there fighting with them, because I’m absolutely desperate for them to be paid properly and appropriately for what they do,” she continued. “They certainly shouldn’t be eating from food banks.” She also told the agency Newton-John’s death made Womack want to share her own diagnosis, “because I thought everyone knows someone that’s got cancer”. “It was very poignant for me when I got my diagnosis that she had lost her battle and they happened within the same timeframe,” she explained. Womack, who played Ronnie Mitchell on the hit BBC soap until 2017, told fans in January 2023 that she had overcome breast cancer. The British actor is now lending her support to a campaign enabling greater access to a new AI breast cancer diagnostic tool called Digistain. The UK’s first breast cancer risk profiling solution, Digistain helps patients better understand their cancer and the specific treatment that will most benefit them. Womack said she didn’t know about Digistain when her cancer was diagnosed, and that she was “anxious not to have chemotherapy” if she didn’t require the “brutal treatment”. “I knew that there was a test called the Oncotype test, which is very similar....(but) it’s incredibly expensive so it’s just not available to most people,” she added. Womack said the test gives a ratio of how beneficial chemotherapy would be and she was “on the fence” so had two rounds before making the decision to stop. Last October, Womack gave fans a health update while receiving the treatment, explaining that she had gotten her appetite back but was struggling with migraines. Amy Schumer has opened up about the reason why she stopped taking Ozempic, as she urged celebrities to be honest about their weight loss. The 43-year-old actor and comedian appeared on Watch What Happens Live with Andy Cohen on Thursday (8 June), where she revealed that tried taking the type 2 diabetes drug Ozempic for weight loss last year. “Like a year ago, I tried it,” she told Cohen, before admitting that she stopped taking the FDA-approved medication because of its side effects. “I was one of those people that felt so sick and couldn’t play with my son,” Schumer explained, referring to her four-year-old son Gene, who she shares with husband Chris Fischer. “I was so skinny and he’s throwing a ball at me and [I couldn’t].” Although the Trainwreck star admitted that she was “immediately invested” before trying the drug, she ultimately decided that Ozempic wasn’t “livable” for her. However, Schumer did take a moment to call out celebrities who have been “lying” about taking the once-weekly antidiabetic injection for weight loss. “Everyone’s like: ‘Smaller portions,’” she joked. “Shut the f*** up. You’re on Ozempic, or one of those things.” Much like Ozempic, FDA-approved medications Wegovy and Mounjaro are also brand names for semaglutide – which work by mimicking a hormone that regulates appetite and creates the feeling of fullness. “Just stop,” Schumer added. “Just be real with the people.” The Inside Amy Schumer star even noted how she was open about undergoing liposuction for weight loss in January 2022. “When I got lipo, I was like, I got lipo,” she said. Ozempic, a once-weekly injection used for the treatment of type 2 diabetes, has skyrocketed in use after people were reportedly prescribed the diabetes medication as an “off-label” weight loss drug. Meanwhile, Wegovy and Mounjaro are once-weekly semaglutide injections specifically approved for the treatment of obesity and weight loss. There are many side effects of taking medications like Ozempic, Wegovy, and Mounjaro. According to the US Food and Drug Administration (FDA), the most common side effects of taking Wegovy include nausea, diarrhea, vomiting, constipation, abdominal pain, headache, fatigue, indigestion, dizziness, and digestive disorders. The FDA has also warned against more serious complications that can occur from using Wegovy or Mounjaro, such as the “potential risk of thyroid C-cell tumours,” pancreatitis, gallbladder problems, acute kidney injury, increased heart rate, and suicidal behaviour or thinking. Meanwhile, taking Ozempic can lead to possible thyroid tumours, including cancer, pancreatitis, changes in vision, and kidney and gallbladder problems. Amy Schumer isn’t the only celebrity to open up about taking certain medications for weight loss. Comedian Chelsea Handler previously revealed that she “didn’t know” she was on Ozempic because her doctor allegedly “hands it out to anybody”. During an appearance on Alex Cooper’s Call Her Daddy podcast in January, the Chelsea Lately star spoke candidly about the alleged widespread use of Ozempic in Hollywood and her concerns over its popularity. “So, my anti-ageing doctor just hands it out to anybody,” Handler claimed. “I didn’t even know I was on it. She said: ‘If you ever want to drop five pounds, this is good.’” She said she realised she was taking the type 2 diabetes drug for weight loss after feeling nauseous while at lunch with a friend, who was also on Ozempic. When her friend asked if Handler was taking the medication, which the comedian referred to as “semaglutide” during their conversation, her friend informed her Ozempic was simply a brand name for semaglutide. However, Handler said she stopped taking the medication after she realised what it was. “I’m not on it anymore. That’s too irresponsible,” she shared. “I’m an irresponsible drug user, but I’m not gonna take a diabetic drug. I tried it, and I’m not gonna do that. That’s not for me. F1 commentator Jack Nicholls has lost his job at BBC Radio 5 Live after complaints of “inappropriate touching” which led to his dismissal from his lead commentator role with Formula E. An investigation was launched by Formula E after a formal complaint of inappropriate behaviour in March and allegations of “inappropriate touching” were made by three individuals, one of whom had been in a relationship with the commentator. Now Nicholls, who combined his role with Formula E alongside commentating on F1 races for 5 Live, has also lost his job with IMG, who provide radio F1 coverage for the BBC. An IMG spokesperson confirmed to The Independent on Friday: “IMG has decided to part ways with Jack Nicholls in light of the incidents that led to his departure from Formula E.” After losing his job at Formula E at the end of May, Nicholls said: “Although disappointed with the decision, I respect it and accept why it was taken. “I want to take full responsibility for what I did and apologise unreservedly for a couple of isolated incidents that has made those concerned feel uncomfortable. “I never meant any harm and I am committed to making amends and to be more mindful of my behaviour in future.” Nicholls’ voice is synonymous with Formula E with his “and we go green…” intro to races well-known to fans since the championship began in 2014. But since the investigation, Nicholls had commentated on FE races remotely from a base in London, with Ben Edwards replacing him for the double-header in Jakarta two weeks ago and for the remaining five races of this season. Nicholls combined this role with F1 commentary for the BBC, a job he has performed since 2016, but he stepped aside from scheduled appearances at the Monaco Grand Prix three weeks ago after the Formula E investigation had concluded.
