Chef Ravinder Bhogal: Vegetables are the secret to saving money
With food prices hiking, many of us are looking to cut the price of our weekly shops – while still eating delicious food. And the answer, Ravinder Bhogal believes, lies in vegetables. “Vegetables are the ultimate economical thing to cook,” says the chef and restaurateur, who was discovered by Gordon Ramsay after she applied for his competition to find “Britain’s new Fanny Cradock” on The F Word. “Meat has become so expensive. If you lavish the same kind of care and attention on [vegetables] as you do a steak or joint of meat, they are going to sing with flavour.” She continues: “Why can’t you take the time to marinate vegetables, inject them with flavour, baste them, add texture to them or play with their textures?” Bhogal, who was born in Kenya to Indian parents and moved to England at the age of seven, says root vegetables are our real saviour when it comes to budget cooking in Britain. “Anything that’s grown in this country, swedes, celeriac… And if you buy in season it’s naturally going to be a bit cheaper.” The 44-year-old, who owns London restaurant Jikoni (the Swahili word for “kitchen”) is vegetarian “80 per cent of the time – then I might have a Sunday roast or something” has released her third cookbook, Comfort & Joy: Irresistible Pleasures From A Vegetarian Kitchen. “There are so many things that you can do with vegetables where you’re just not going to miss the meat. What isn’t there to love about the lightness and brightness of vegetables?” And there’s a real misconception that vegetables can’t be comforting, she says: “For me comfort is about food that nourishes you, that makes you feel well, that makes you feel alive, that makes you feel revived.” It was Bhogal’s early years in a multigenerational household in Nairobi (“My grandparents, my uncle and aunt, their children, my mother’s brood of five, whoever happened to be visiting, there was a parrot, a dog, kittens, chickens, goats – it was a really chaotic household!”) that would pave the way for how she approached food later as a chef. Her grandfather dutifully tended to his shamba – or allotment – and had a deep respect and connection to the verdant soil where many vegetables grew. “When he came from India to Kenya, he completely fell in love with this beautiful red, volcanic soil that just seemed to give and give and give,” says Bhogal. “And he never stop being grateful for that. He’d come from a place where there was so little, and then suddenly, there was this soil that just blessed him and his family with all these beautiful things to eat.” Everything the household ate was either grown by him or came from the “mama mbogas” – local women with smallholdings who peddled their “the freshest hand grown vegetables” from door to door, she says. The chef in the house was her mother though, who was an “exceptionally talented” cook. “There were so many mouths to feed, so you can imagine the level of organisation that it took. She was the commander in chief and we were all her assistants, whether you liked it or not.” As a result, Bhogal learned to cook from her mother’s direction, although she wasn’t always happy about it. “Initially, I really resented it because growing up in quite a patriarchal household, the boys would be outside playing, and the girls would be in the kitchen. And that really sucked to me. “Anything I tried to attempt to cook, [my grandfather] would always tell me how delicious it was and praise me, and I think I made that connection between food and love and winning people over with food.” And the influence of her time in Kenya can be seen in the latest book; think pili pili cassava (one of the go-to carbs in many African nations) or Kenyan maru potato bhajias with tamarind and tomato chutney (potato coated in spiced chickpea flour and fried). Swapping Kenya for England as a child left a mark on Bhogal. “Kenya is like a state of mind, it’s such a bewitching country, it never really leaves you, it clings to you,” she says. “When you grow up with such colour and such a colossal sky… I was outdoors a lot, playing with all the animals [with] this really beautiful, very lush sunny backdrop. When you are plucked from that age seven and turn up in a very grey dark England, you try and hold onto that and keep connected to that.” South East London was “very different and sort of haggard in comparison to Kenya”, she says. “Everything was very small suddenly. I grew up in a flat above a shop and going from huge trees and sky that was ever blue to turning up to this very dark, dank [place]… The adjustment was very, very difficult.” But it’s all culminated in her cookery style now. “I consider myself a hybrid, I’m Indian, there’s Persian ancestry too, I’m British, I grew up in London, I’m also the product of all kinds of the diverse immigrant communities that helped bring me up.” So you’ll find Persian-inspired fermented rice, lentil, beetroot and coconut handvo (a savoury cake) in her new book, alongside Mumbai street food like peanut and golden raisin poha, and English grilled peaches with silken tofu and Thai basil and lime leaf gremolata. The recipe for pea kofta scotch eggs with saffron yoghurt is vibrant amalgamation; honouring memories of her father bringing home a sack of locally grown peas from Nairobi’s bustling city market and shelling them in the kitchen with her mother – it is a hybrid of her mother’s Indian recipe and her British identity. Plus, some that have been tried and tested by her discerning restaurant diners, like mango and golden coin [curry with dumplings] – where the mangos are served whole, stone and all. “I remember telling my husband I was going to put this mango curry on the menu and he was like, ‘You’re insane, how are people going to eat a whole mango?’ And it’s gone on to be one of the most popular things. “I think the whole joy of a mango is the generosity of serving it whole, there’s something about a whole mango that’s so rapturous,” Boghal says. “When it comes to the table people often go, ‘Is it chicken breasts?’ Nothing gives me more joy than to see people using pooris to scrape off the flesh from the mango and pick up the stone and gnaw on it. “I think if you don’t have a problem picking up a lamb bone and gnawing it, why not a mango stone?” ‘Comfort & Joy: Irresistible Pleasures From A Vegetarian Kitchen’ by Ravinder Bhogal (Bloomsbury, £26). Rumer Willis has hit back at online criticism over a photo of herself breastfeeding her daughter, Louetta. The actress took to Instagram on Friday to share a post in honour of her 35th birthday, which featured the selfie of her breastfeeding her daughter, who she welcomed in April with boyfriend Derek Richard Thomas. In the comments, many of her followers criticised her for sharing the photo, with questions about “why” she posted it on social media. However, Willis - the daughter of Bruce Willis and Demi Moore - didn’t hesitate to hit back at the criticism, as she started off by simply responding to the “why?” question with: “Cause I want to.” Another Instagram user also alleged that Willis posted the photo “for attention,” with claims that “nursing a baby is very private and should not be displayed like a circus event”. In response, Willis expressed how she viewed the ability to feed her daughter as a “privilege,” and accused the critic of holding “a limited view of” breastfeeding. She continued her comment by defending her decision to post the photo, and explaining how she wanted it to lessen the “shame” that women face. “I think it’s incredibly important to share because there is an incredible amount of shame that comes with being born into a female body,” Willis wrote. “And I want to lead by example in teaching my daughter that she doesn’t have to be ashamed of her body ever and that she can decide how she wants to share it.” When a third critic on Instagram claimed that the Sorority Row star was a “narcissistic” and “insecure”, she responded by telling them that she “really couldn’t care less about [their] opinion,” or about what they “think [she’s] doing,” since she knows what her “intentions” are. After claiming that she “pitied” the critic, she went on to emphasise that being able to breasfeed, in addition to being a mother, is a “privilege”. “[It’s one] I definitely don’t take for granted,” she wrote. “So I will celebrate every sec of this journey because this is my first time doing all of this and I honour and have the deepest reverence for all of the women who have walked this path before me.” She concluded: “I’m sharing because things like breastfeeding need to be honoured instead of shamed. I feel so sorry for you. I am the happiest I have ever been in my life.” Earlier this year, Willis took to Instagram to announce the birth of her daughter with Thomas. “Louetta Isley Thomas Willis. You are pure magic,” she wrote in the caption, alongside a snap of her then-newborn. “Born at home on Tuesday April 18th. You are more than we ever dreamed of.” Willis’ response to critics over her breastfeeding photo also comes days after she celebrated her body on Instagram. As she shared a nude photo of herself, she wrote that, although her body “feels a little different,” she’s “truly in awe everyday” when she looks at her child. She went on to praise her body for how it looked, while acknowledging that her body was “still redjusting” after giving birth. “This body of mine that I spent so many years trying to shape and mold into what I thought was desirable or made me feel good in clothes, is a little softer and rounder and jiggly and different and that’s okay, more than okay, it’s kind of amazing because I grew a person inside of it,” she wrote. “This little being that I love with a fierceness and wonder that reaches new levels everyday. I know my body is still readjusting, but whatever shape it ends up in I am just grateful for all that it did and continues to do.” She also described her breasts as a “gift” to her baby, before detailing the different ways in which she’s used her body to care for her child. “In the ongoing process of transformation, I am grateful for every twist and turn,” Willis continued. “My breasts, might be bigger and perhaps ever so drifting downward but what a gift and privilege that they can feed and provide nourishment for my Lou. They also make a fantastic pillow while we co sleep. F1 icon Willy T. Ribbs: ‘There were death threats – but I was never going to play the victim’
As often was the case amid an American society embedded in racism in the 1980s, Muhammed Ali put it best. Advising black racing driver Willy T. Ribbs, the people’s champion made his point in no uncertain terms: “There are Blacks in my sport. But there are no Blacks in your sport. “They’re going to want to kill you.” Yet for all the death threats, discrimination and abuse, Ribbs had long decided that the only option was to meet the uphill battle head-on. He made history in 1986 when he became the first Black driver to test an F1 car. Five years later, he was the first to race in the Indy 500, one of the world’s most famous events. But on the course to that journey, Ribbs faced it all. Don’t let me tell you though; let the man himself. “Of course, there were death threats, the n-word,” he reflects, in a slow but dead-pan fashion that tells you the wounds have long since healed. Instead, the metaphorical bruises are worn with pride. “But I enjoyed it. It didn’t make me mad, it was fun. I was going to dish out what they were dishing out to me, it never scared or intimidated me. I actually enjoyed it because it was motivating. I was never going to play the victim, that was not Willy T. Ribbs.” Now 68, Ribbs is an ambassador for Formula 1, raising awareness for diversity and equality. A role given a matter of months after his riveting biopic movie, Uppity, was released in 2020. So titled because that was his nickname in motorsport circles – “and he loved it.” But to this interview, he’s late. And he apologises, quipping: “Race drivers are never late, you know! Or they’re not supposed to be…” Son to William ‘Bunny’ Ribbs, an amateur racer himself, Willy’s career path was set in stone from day-dot it seems. It was the racing way or the highway. “I was born in this sport,” he tells The Independent, from his home in Texas. “I watched it from three years old when my Dad was racing, watching the likes of Jim Clark and Graham Hill. That’s all that was discussed in the family. We didn’t discuss any other sport. “I was lucky, I think. At nine years old, I knew what I wanted to do and I knew what my career path was going to be. Most kids that age don’t know what the hell they’re going to do, but I did. And I didn’t want to be an amateur at it – I wanted it to be a profession and I wanted it to be Formula 1.” He learned his craft, in the UK, racing alongside future F1 world champion Nigel Mansell in Formula Ford in the mid-1970s. He raced in NASCAR and the Trans-Am Series, later on, too. But his F1 calling, in ’86, came in the Portuguese town of Estoril. Bernie Ecclestone’s Brabham team – “Bernie has always been good to Willy T. Ribbs” – gave the American the chance to buck the trend and become a true trailblazer. But the tag was not something he felt comfortable with at the time. “All that mattered was I thought of myself as a race driver,” he says. “I had two responsibilities: to myself and to my team. For those who record social history, that’s their job [to say trailblazer] – but I’m not going to carry that weight on my shoulders. “Sure. I was a role model because I was doing something no other Black kid had done. And great, if that’s the category they want to put me in and how they want to document it. But for me? It was about going fast.” It was a mindset of not bowing to the status quo, embodied most especially in the late 20th century by Ali. “What I admired about him the most was not his boxing skills,” Ribbs says of Ali. “What I admired about him was his resolve as a man, not to be squashed, manipulated or controlled. Ali said ‘you have to let them know that you can’t be killed, there’s nothing they can do to you and then they’ll leave you alone for a while.’” Now in motor racing, the baton has been passed on to seven-time Formula 1 world champion and the sport’s only Black driver Lewis Hamilton, whom Ribbs is full of praise about. “Lewis Hamilton, after seven world titles and more victories than any other human being, gets unfairly targeted,” insists Ribbs. “If you can equate it to Tiger Woods, what did Tiger Woods do for golf? He broadened the audience. The attention went off the chart. That’s exactly what happened in F1 – Lewis Hamilton has been Formula 1’s Tiger Woods. “He’s a very kind man. He’ll let it roll off, turn the other cheek – I wasn’t that way. He deals with it and in a lot of cases it’s unfair. Then again, he is in an environment which was not nearly as brutal as I was dealing with. Willy T. Ribbs was treated differently.” The third-person references point to a man who is now comfortable in his own skin; in the significance of the struggle – and what it means to many around the world.
