Treat Dad this Father’s Day to these viral TikTok recipes
Father’s Day (18 June) is just around the corner, which is a great opportunity to get together as a family and show the dad figures in your life some love, and if the saying “the way to a man's heart is through his stomach” is true, there’s no better way to celebrate than by cooking up a seriously scrumptious meal. Luckily, we’ve sat down with professional chef and host of foodie favourite the Desert Island Dishes podcast Margie Nomura, who has shared her ultimate Father’s Day Menu, including a seriously delicious cauliflower starter, TikTok favourite burrata pasta and oozy double chocolate muffins. All these recipes are family-friendly and simple to make. Whole roasted cauliflower with tahini and chimichurri This dish is a perfect substantial starter to kick off any Father’s Day feast. It’s a great substitute for a cut of meat and is easy to make when you’re feeling lazy. When you roast a cauliflower whole it takes on this buttery, sweet but salty crust in the oven so make sure you roast it until it is soft enough for a knife to cut through. For the chimichurri, you won’t use all of this for the cauliflower but it keeps beautifully in the fridge for up to 2 weeks and is amazing served as a salad dressing or on vegetable kebabs. Serves: 4 as a starter and 2 as a main Prep time: 15 minutes | Cook time: 60 minutes Ingredients: 1 medium-sized cauliflower (remove thick ugly outer leaves but leave any smaller more delicate ones) 2 tbsp olive oil 1 tsp Maldon sea salt For the chimichurri, mix together: 1 finely diced shallot 1 diced red chilli pepper 3-4 diced garlic cloves ½ cup red wine vinegar 1 tsp salt 1 tsp red pepper flakes ½ cup finely chopped coriander 2 cups finely parsley 3/4 cup extra-virgin olive oil (more oil as needed to get the right consistency – it should be runnier than a pesto, more like a heavily flavoured chunky oil) For the garlic yoghurt: 4 heaped tbsp Greek yoghurt 1 clove garlic crushed Juice of ¼ lemon 2 tbsp tahini to serve Method: Pre-heat the oven to 200C. Fill a large pot of water and season well with salt and bring to a boil. Place the cauliflower in, cover and let cook for 6-8 minutes, depending on the size. Check to see if ready by poking the stem with a knife, and then remove the cauliflower and place it on a sheet tray to steam dry for around 10 minutes. Cover with extra virgin olive oil and season well with sea salt. Return to the oven and let roast for 45 minutes until charred and golden all over. Remove from the oven Spoon some garlicky yoghurt onto a serving plate and pop the cauliflower on top. Drizzle with tahini and chimichurri. Cut into wedges and enjoy! Spaghetti with garlic tomatoes and burrata This pasta dish is one of my favourite go-to recipes, especially in the summer when you want something light and no fuss but still seriously delicious. This is a recipe that anyone at home can make, which means it’s a perfect dish for Father’s Day as everyone can pitch in and present a beautiful dish be proud of. Serves: 2 Prep time: 5 minutes | Cook time: 20 minutes Ingredients: 2 tbsp olive oil 4 garlic cloves, minced ¼ teaspoon crushed red pepper flakes 300g cherry tomatoes ½ tsp caster sugar Maldon salt and pepper 250g spaghetti or linguine Handful of chopped fresh basil, plus more for sprinkling 1 large ball of burrata cheese, torn Parmesan cheese, for topping Method: Heat the olive oil in a large pan over medium-low heat. Add in the garlic, and red pepper flakes, cooking for 1 to 2 minutes. Add in the tomatoes with a big pinch of salt and pepper and toss them in the oil. Let the tomatoes cook until they begin to burst. Add the sugar. Smoosh the tomatoes with the back of a wooden spoon gently to encourage them to burst. While the tomatoes do their thing, bring a pot of salted water to a boil and cook the pasta. Once the pasta is done, drain it (save a cup of cooking water) and add it directly to the tomatoes. Toss the mixture a few times so all the pasta is coated. Add a splash of pasta water as needed. Turn off the heat and toss in the fresh basil. Taste and check for seasoning. Top with burrata cheese. Serve immediately, top with parmesan cheese, more fresh basil and red pepper flakes and a drizzle of olive oil. Double chocolate muffins These muffins are soft, pillowy and rich. Complete with chopped dark chocolate, they are the best sweet treat to end a Father’s Day feast. Plus, if you eat them whilst warm you can expect melty chocolate in the middle. This recipe has only 4 steps, and can be made earlier in the day so they work well when you’re doing a three course meal. If your dad has a sweet tooth, I would recommend serving with some vanilla ice cream on the side! Makes: 6 muffins Prep time: 20 minutes | Cook time: 20 minutes Ingredients: 250ml buttermilk 120ml vegetable oil 2 eggs splash of vanilla 300g plain flour 180g sugar 65g cocoa powder 1 tsp bicarbonate of soda 1 tsp instant coffee (even if you don’t like coffee, you should add it as you can’t taste the coffee taste but it enhances everything else!) Pinch of salt 200g dark chocolate, chopped into chunks Method: In a bowl combine the flour, sugar, cocoa powder, bicarbonate of soda and salt And then in a separate bowl mix the wet ingredients together Pour the two together and then add the chopped chocolate Scoop into a lined muffin tray and bake at 180 c for 20 mins. The owner of a Chinese takeaway has become an internet icon for her fiery responses to disgruntled customers. Alice Cheung, the boss of Oriental Express restaurant in Pudsey, West Yorkshire has garnered 149 reviews on Just Eat – and she’s made a point of personally replying to every negative one. While most customers award the eatery five or six stars, Cheung refuses to pander to the complaints of some of the “sillier” reviews, she told Leeds Live. So when one woman complained that the food was “terrible”, she was having none of it. Sign up to our new free Indy100 weekly newsletter “You ordered a Vegetarian Munch Box and then called the shop to complain there was no MEAT in it,” Cheung wrote back. “We sent what you ordered and there was nothing wrong with it. The bad review is to cover your error,” she continued, before ending the response: “Please do not call again.” Another reviewer moaned that her meal was “not good, soggy and old” and that she “threw most of it away,” before condemning it for being much more expensive than her regular takeaway. Cheung, or rather Oriental Express, replied: “I suggest you stay with the other takeaway and take your false review with you.” Responding to a one-star reviewer, whose full comment has been deleted, Cheung wrote: “What sort of idiot orders ‘Salt & Pepper Chicken’ and then complains it has salt in it, our delivery record shows it was NOT late and it was NOT cold. “A fake review and derogatory too. Take your foul mouth and business somewhere else.” Another critic – who offered the restaurant a similarly measly two stars out of six – said her meal had been “totally ruined” by “small pieces of battered dry chicken mixed in with battered prawns.” The furious response read: “Will you please open your eyes and read the descriptions, you ordered the ‘Special sweet and sour’ which contains king prawns. You got what you ordered so how is this our fault? “The food was fresh and perfectly cooked. We are good but mind reading the stupid is not one of our skills.” Another two-star reviewer failed to write a justification for his low score. So Cheung replied sardonically: “Thank you Kyle, whay? Too much food, too hot, too tasty, delivered too quickly?” Speaking to Leeds Live, Cheung defended her tough tactics: “If you’re writing a review just be honest about the situation,” she said. As Rebecca Adlington shares heart-breaking miscarriage news: How to support others experiencing baby loss
Rebecca Adlington said she is “truly heartbroken” after suffering a late-stage miscarriage. The double Olympic gold medal swimmer found out about the devastating loss at a routine 20-week scan, sharing the news in a post on Instagram yesterday evening. “I don’t really have the words right now but unfortunately we went for our 20 week scan this week and they found no heartbeat. I gave birth to our angel, Harper on Friday at 7pm. We held her, and had time with her. We will forever love her and remember her always,” Adlington, 34, said. After thanking staff at Wythenshawe Hospital for their “kindness and care”, she added: “I don’t have the strength or words right now and don’t feel ready to share this news. However, I can’t pretend to be ok or fake a smile. I can’t have people ask me how pregnancy is or when I am due as I still look pregnant. I don’t have the strength to tell this news individually. “We are so truly heartbroken. Our beautiful girl. Rest in peace.” Adlington – who shares son Albie, two, with her husband Andy Parsons and has an eight-year-old daughter, Summer, from her previous marriage with Harry Needs – previously revealed she’d had a miscarriage 12 weeks into her pregnancy last August, resulting in emergency surgery. And as her Instagram post this week highlights, one of the many difficult things about losing a baby is telling other people. So, how can people respond supportively when a friend, relative or colleague shares news of a baby loss? Showing empathy “It’s about showing empathy as much as you possibly can, showing some form of understanding, and really just being there to listen to them,” Rochelle Love, a midwife working with baby loss charity Tommy’s, told the PA news agency. A late miscarriage is one which happens between 14-24 weeks of pregnancy, and is less common than early-stage miscarriage, occurring in an estimated 1-2% of pregnancies, Love explained. “We don’t always know why these miscarriages happen. They can be for a multitude of reasons, and the sad thing for expectant parents is that we may not always find a definite cause,” she added. “It may not necessarily be related to previous miscarriage.” Take care with ‘helpful’ comments Friends and family may try to comfort someone who’s lost a baby with well-meaning but sometimes way off-the-mark ‘helpful’ comments. Love said it’s crucial to be very careful about what you say. “I don’t think it’s ever up to us to make assumptions, and especially do not make comments like: ‘Don’t worry, you can have another baby’, ‘Don’t worry, you can try again’, or, ‘You were only 20 weeks pregnant’,” Love advised. “I think sometimes people just don’t know what else to say, so they make these throwaway comments, which are not necessarily the best things to say when someone’s grieving. It’s not up to us to say [these things] – how do you know, for example, that they can have another baby? Think about what you’re going to say before you speak to someone who’s had a loss.” Be mindful of terminology Remember this isn’t just a foetus to the grieving parents – it’s their child, and it can be very important to talk about it as such. Love said: “Address the baby as their baby, and if the baby has a name, then use it. Be very careful of the words you use.” Be there for them Instead of offering up platitudes, Love said it’s often better to just let people know you’re there if they need you. “Just let them know you’re there for them – you’re there if they want to speak, or if they just want to sit in silence – you’re available to be their support if and when they should need it,” she explained. Don’t forget their partner Love stresses that any kind of support needs to be extended to the partner as well. “Sometimes the partner is ignored and we just focus on the pregnant person, but the partner is the pregnant person’s closest support and they’ve also lost their baby and are also grieving,” she said. “I always advise anyone who’s had an unfortunate loss that if they decide to go for grief counselling, they should make their partner a part of that process as well, so they can go on that grief and healing journey together.” Remember everyone will grieve differently Loss and grief is experienced differently by everyone. “How I may grieve a pregnancy loss may be very different from how somebody else might grieve,” said Love – so it’s important to let people do things their way and at their own pace. Think about offering them helpIf you are close with them, offer practical help if you feel they may welcome it.
