Reusable water bottles tick many boxes. Not only do they help you stay hydrated and help save money, but they also help cut down on single-use plastic. They've almost become a fashion accessory, with chic stainless steel flasks and viral bottles going viral across TikTok. Sign up for our free Indy100 weekly newsletter Trying to hit the NHS-recommended eight glasses of water a day for adults is an excellent idea, of course, but did you know there’s one way your refillable bottle could potentially be detrimental to your health? According to a study from waterfilterguru.com, reusable water bottles contain an average of 20.8m colony-forming units (CFUs) of bacteria, which equates to 40,000 times more than the microbes on a toilet seat. So what might be the consequences if you continuously sip and refill without washing your bottle properly between uses? We asked health experts to talk through the risks… Bottling up bacteria “A common misconception when it comes to reusable water bottle hygiene is that as you’re typically filling it with pure water and it’s only coming into contact with your own mouth, there’s little need to clean it often,” says Dr Donald Grant, senior clinician at The Independent Pharmacy. However, every time you drink from the bottle, you’re transferring bacteria from your mouth, which can then multiply in the container. “Anything that is reusable can be prone to accumulating dirt, dust or debris and, as a result, bacteria,” says private GP Dr Suhail Hussain. “This is exacerbated by the fact water bottles are the ideal environment for harbouring bacteria due to being moist.” Hard-to-reach crevices – for example, inside a screw top or under a flip-up straw – could also develop mould, and then there’s contamination from other sources. “When you store it in a gym bag, for instance, it can pick up bacteria from the interior of the bag or anything else stored in it, while you can also transfer bacteria from your hands to your bottle,” says Grant. “If your bottle has a valve cap, you may need to lift or twist it with your fingers, and this can transfer bacteria you may have picked up from touching other objects or surfaces.” What types of microbes are found in water bottles? “These might be simple commensals such as streptococcus and staphylococcus, which normally live in symbiosis with their host (i.e. us) but can become problematic if they accumulate or the individual is under the weather,” Hussain says. “Bacteria such as E. coli – a common cause of urine and bowel infections – can often colonise the water bottle following repeated handling, such as taking the cap on and off.” These bacteria can potentially cause a variety of issues. “You may become sick and develop gastric illness, such as diarrhoea or vomiting,” Hussain continues. “Gram negative rods – another common bacterium found in unwashed bottles – can lead to urogenital tract infections and pneumonia.” Grant warns: “If there’s a build-up of mould inside the bottle, this can cause allergy symptoms, such as a runny nose, sneezing, or red and itchy eyes. Symptoms might be more severe for someone with asthma.” How often should you wash your reusable water bottle? “To minimise your risk of getting sick, you should ideally clean your water bottle after each use,” Grant says. “As a minimum, you should aim to wash it thoroughly at least a few times a week.” Hot water and washing up liquid are all you need to banish bacteria on a daily. “Fill the bottle with hot soapy mixture and swill around, or leave to soak in a detergent mixture,” Hussain advises. “Remember to pay special attention to lids/caps and screw top regions – use a clean brush [to scrub them].” If you’ve neglected your bottle for a few days and it needs a deeper clean, Grant suggests: “Soak your bottle overnight in a solution of half vinegar and half water. Rinse the bottle and let it dry fully before using it again.” Storage is also important to help minimise nasty microbes. “Where possible, you should keep your water bottle out of germ-rich environments such as your gym locker or sports bag,” Grant says. “You should also avoid filling your bottle with anything other than water, such as protein shakes, energy drinks, or sugar-rich liquids, as sugar can stimulate the growth of bacteria.” Hussain adds: “Don’t leave a water bottle in the sun for long periods or sitting in the cup holder in the car – the mixture of warmth and moisture is likely to make bacterial overgrowth worse.” Have your say in our news democracy. An air fryer can make Christmas as easy as mince pie – here’s how
We’re all looking for ways to make Christmas dinner easier – and if you’ve got an air fryer, festive food could be a whole lot simpler. Christmas dinner normally requires a lot of effort to pull together all the starters, turkey and side dishes, and chef Poppy O’Toole says she’ll “definitely” be using her air fryer to help everything come together. Michelin-trained O’Toole, 29, is something of an early adopter of air fryers – she first fell in love with them in 2018, and says: “I was working in kitchens at the time, and I was like, I don’t know how chefs are going to feel about this. It might fade, but I was intrigued – and it’s got bigger and bigger.” She adds: “It was so easy to get on board with because of how convenient they are. As a chef, I wasn’t at home a lot – so my partner could use it really easily without me having to be over his shoulder.” They’ve got speed and energy efficiency going for them, O’Toole suggests, and she’s even dedicated her most recent cookbook to air fryer recipes. Her air fryer will go into overdrive on Christmas day, “because I need all the space for everything”, the Worcestershire-based chef says. “I’m going to be feeding a lot of people.” “There’s not enough space to do everything, but what it’s really good at is giving you the capability to do more stuff at the same time,” she notes. “So you’re not just relying on the oven and the hob – you’ve also got this other piece of equipment, which is amazing at cooking things and it can be done quicker and more energy efficiently.” Before diving in, there are a few mistakes O’Toole warns against making with your air fryer on 25 December. “Make sure you put a timer on. I’ve done that a few times, where I’ve gone, it comes out in 20 minutes or whatever and you go, ‘yeah, I’ll come back in a few minutes, it’ll be fine’. And I’ve left it in there the whole time and it’s burned to a crisp.” The second thing to watch out for? “Don’t overcrowd,” she says. “It can be very easy to throw it all in, it’ll be fine. But it doesn’t work that way – the whole point is that the air circulation gets around everything, so it needs a gap where that can happen.” And if you’re looking to impress your guests with beautiful-looking food, O’Toole recommends keeping your air fryer clean. “This is another thing that I do very regularly, and I think a lot of people do – I don’t wash it enough, I don’t clean it enough. I end up getting these little dark bits on the rest of my food, which is fine when you’re cooking for yourself – that doesn’t matter. “But when you’re cooking for other people, if you’ve got family coming over, you want to make sure it’s the best. So make sure in between each thing you cook, you give it a little wipe down.” Interested in using your air fryer this Christmas? This is what O’Toole recommends doing… Starters “I always like little nibbly bits on Christmas,” admits O’Toole – and these can be easily whipped up in the air fryer. “It’s something a little bit different around lunchtime, because I have my Christmas dinner a bit late – I have it more as a dinner around three, so around 12 you’re getting a bit peckish. So I do some lovely little nibbles – like crispy wontons, spring rolls, samosas, that sort of thing. They’re really tasty and fill everybody up, without having to do much.” If you’re feeling industrious you can make these yourself, but they’re just as delicious from frozen – and you can save all your cooking efforts for the main meal. The main event For O’Toole, the best way to use your air fryer is for all the festive sides. “It’s really good for roasted parsnips, roasted carrots, sprouts or chestnuts,” she says. You can cook the parsnips and carrots together. “And then they can be ready and waiting for when you want them – you can get them into a tray, and once they’re cooked, you can keep them at the bottom of the oven or in a tray that you can warm back up”. And one of the most important parts of any Christmas dinner: “I’ve got to say roast potatoes are very good in there, and you don’t have to pre-boil them – so that’s given you more space on the hob.” How can you pull off perfectly crispy roasties in the air fryer? “Chop them up, get them in a bowl, add a tablespoon of water, a little bit of oil and salt – give it a mix, so we’ve got a bit of moisture on them. Then you get them into the air fryer and cook them about 160C or 170C for about 20 to 30 minutes, so they’re a little bit cooked, then you whack it up to about 200C to get the golden crispy outside.” Dessert While O’Toole doesn’t plan on making Christmas pudding in the air fryer this year, there are plenty of sweet treats you can do in there instead. Her sister will be clamouring for a pecan and pretzel blondies recipe (or you can try any variation on brownies you like – even mince pies would work), and O’Toole adds: “Custard tarts – they’re so simple and something about doing them in the oven is always terrifying to me, but being able to put them in the air fryer for literally a few minutes is perfect. “That’s definitely something I’ll be doing.” ‘Poppy Cooks: The Actually Delicious Air Fryer Cookbook’ (Bloomsbury Publishing, £20). Adrian Newey reveals ‘emotional’ Ferrari and Lewis Hamilton regret
Red Bull design chief Adrian Newey admits he has an “emotional” regret about not working for Ferrari during his career – as well as teaming up with Lewis Hamilton and Fernando Alonso. Newey, the man chiefly responsible for this year’s RB19 car which secured the 2023 constructors’ championship on Sunday in Japan, has worked for Red Bull since 2006 but has been approached by Ferrari three times throughout his career. The 64-year-old engineer worked for Williams and McLaren prior to his time at Red Bull and revealed to the Beyond the Grid podcast that Ferrari offered him a role three times, with a move in 1993 the most tempting. “[Ferrari approached] me in my IndyCar days, which probably doesn’t count, then ’93 and famously in 2014,” he said. “The ’93 one was very tempting.” However, Newey detailed that the breakdown of his first marriage – impacted by his time in the United States with IndyCar – meant he opted against making a move to Maranello, Ferrari’s HQ in Italy, due to his second marriage. Another advance in 2014, Newey admits, was due to Red Bull’s engine issues at the start of Mercedes’ hybrid-era dominance. “My discussions in 2013 with Ferrari were purely out of frustration,” Newey said. “I really didn’t want to leave but we were in this position where Renault hadn’t produced a competitive turbo hybrid engine. “We went to see Carlos Ghosn [ex-Renault CEO] to try and put pressure on him to up the budget. Ghosn’s reply was ‘Well I have no interest in Formula 1. I’m only in it because my marketing people say I should be.’ That was such a depressing place to be.” Asked if he regretted turning down Ferrari, Newey responded: “Emotionally, I guess, to a point. Yes. “But just as, for instance, working with Fernando and Lewis would have been fabulous. But it never happened. It’s just circumstance sometimes, that’s the way it is.” Newey has been involved in six F1 drivers’ victories at Red Bull and is on the cusp of a seventh with Max Verstappen able to secure his third championship next week in Qatar. The Brit has won a total of 12 constructors’ championships with three different teams during his long and successful career in Formula 1.
