Today’s Google Doodle celebrates one of India’s most famous street food snacks – the bite-sized pani puri. The dish is one of India’s most popular street foods and can incorporate many different flavours depending on the ingredients used and where in the country it is being made. The popular snack consists of a crispy, deep-fried shell that is cracked open on one side and stuffed with any combination of potatoes, chickpeas, spices or chillies dunked in flavoured water. The tiny snack is best eaten quickly in rounds, with customers dipping the shell into the water and popping it whole into their mouths before the next shell is offered. The sweet and savoury dish goes by different names in different parts of India. In capital Delhi, it is known as gol gappa, while in West Bengal, Bihar and Nepal, the snack is called phuchka. In southwestern Maharashtra, it is known by the staple pani puri, while in northern Haryana state, it is called paani patashi. In central Madhya Pradesh, the snack goes by fulki and in Uttar Pradesh, it’s called pani ke batashe or padake. In the northeastern state of Assam, locals call it the phuska, while Gujaratis call it pakodi. In parts of Odisha, Andhra Pradesh, Jharkhand and Chhattisgarh, locals call the snack Gup-chup. The process of making the humble pani puri is simple and the filling can be made according to the preference of the person eating it. The options usually consist of a potato stuffing, mashed chickpeas stuffing, boondi or tiny fried gram flour balls. A hot ragda stuffing can also be used, which is a curry or gravy preparation made from dried white peas, spices and seasonings. The server pokes a hole in the deep-drief hollow shell called the puri and fills the stuffing in it. The flavoured water, or pani in Hindi, used to dunk the filling is made either of tamarind, asafoetida, mint, garlic, lemon or jaljeera – a type of flavoured water made with chilli, cumin (jeera) and water (jal, which is another word for water) – and is served to customers one by one. One plate of pani puri usually consists of six to eight bites and costs between Rs 20-40 (£0.20-£0.40). The staple Indian snack is available in almost every north Indian restaurant locally and has only grown in popularity abroad. London’s high end Indian restaurants, like Dishoom, Roti Chai, Indian Accent and Gunpowder, also serve the dish. The snack is best enjoyed when the flavoured water is served cold. Today’s Google Doodle features a bespoke video game in which players “serve” customers’ orders for pani puri with different fillings. Google said 12 July marked the anniversary of a World Record set in 2015 for the most flavours of pani puri offered by one restaurant. It was claimed by eatery Indori Zayka in Indore, Madhya Pradesh. McLaren have announced 18-year-old Bianca Bustamente as the first ever female driver in their development programme. The Filipino teenager will drive with McLaren’s livery in F1 Academy next year, with all 10 F1 teams being represented by at least one driver in 2024. Bustamente is currently seventh in the Academy’s inaugural season standings, having recorded two wins and two podiums this year, ahead of the season finale this weekend in Austin, Texas. She has won numerous karting championships in Asia and has previously competed in W Series, Formula 4 UAE Championship and Italian Formula 4. "To sign with McLaren and ART Grand Prix is way beyond anything I could’ve ever imagined growing up racing karts in the Philippines", said Bustamante. "I still have a hard time seeing my name next to McLaren without getting emotional, as the history and heritage linked to this team leaves me truly speechless.” The likes of seven-time world champion Lewis Hamilton and current McLaren driver Lando Norris have come through the team’s illustrious junior ranks. "I’m so grateful for this opportunity as I believe I now have the best possible development structure around me to take the next step up in my career,” Bustamente added. "For now, my focus is to finish off the F1 Academy season strongly here in Austin, but we’ll get to work immediately on the 2024 season. "I’ve never been more motivated in my life! Harry Styles is the latest celebrity to be replicated in wax form as Madame Tussauds has unveiled not one, but seven wax figures of the popstar after receiving "thousands of fan requests." The seven waxworks will be on display at museums in London, New York, Los Angeles, Amsterdam, Berlin, Singapore and Sydney, each of them sporting some of the singer's iconic looks from recent years. In London, the Harry figure wears a double-breasted hunter green blazer, large flower broach, pistachio green trousers, ivory boots and a bright green handbag, the look is paired with a classic pearl necklace jewellery which references Styles's My Policeman premiere outfit during the 2022 Toronto International Film Festival. In New York, the Harry waxwork will sport the memorable sequin rainbow jumpsuit wore during his 2022 headlining Coachella set, while Berlin's figure will wear Styles's another of his Coachella costumes - an oversize faux fur coat paired with a metallic leather waistcoat and trousers. While some of the other figures will don outfits the As It Was singer has previously worn during his Love On Tour concert series. Sydney’s Styles figure dons a pink satin shirt, burgundy trousers and a feather boa, from one of his shows in San Jose, California. A bronze sequin vest with fringe attached originally worn at a gig in Long Island, New York, is what the LA wax figure will have on, while in Amsterdam it will be a a pink double-breasted suit with floral embroidery, similar to a look he wore on stage in Dallas. For Singapore's Styles waxwork, a blue and yellow two-piece from the Glasgow leg of his Love On Tour concert series will be sported. Daniel Ricciardo is “less likely” to feature at the Qatar Grand Prix next week, according to Red Bull boss Christian Horner. Ricciardo, who returned to the F1 grid in July after replacing Nyck de Vries at AlphaTauri, broke a bone in his hand during practice at the Dutch Grand Prix in late August. The Australian has not featured since and although he is making progress in his recovery, next week’s race in Lusail looks like it will come a bit too soon. “I would say probably less likely than likely at the moment,” Horner said, when asked by Sky Sports News whether Ricciardo would feature in Qatar. "His recuperation is going well but he’s fixed in the seat for next year, does he need to rush a hasty return for Qatar where maybe another couple of weeks for Austin, which is a hell of a bumpy circuit anyway, it might be better to use that time in preparation for Austin. "I know he’s got his sights fixed on Qatar, he’ll drive the simulator next week and then we’ll make some decisions based on that." In Ricciardo’s absence, Liam Lawson has filled in and impressed, especially with his ninth-place finish in Singapore which secured Red Bull’s sister team their best result of the season. “He’s done a great job; he’s really impressed us,” Horner said of Lawson. "He’s done exactly what we could have asked for in terms of grabbing the opportunity in Daniel’s absence to really show his capability. That’s turned some heads and it’s done him a lot of good. "We’ll keep developing him when he goes back into that test and reserve role and he’ll be a candidate certainly for 2025." Despite his good form, as it stands Lawson willnot be on the grid next year, with Ricciardo and Yuki Tsunoda keeping their seats at Alpha in 2024. Lawson has, however, been linked with replacing Logan Sargeant at Williams, with the American’s seat the only position on the grid yet to be confirmed for next year.
