Three recipes that prove traditional Irish food is better than you think
“I love the sticky sound this steamy pasta makes as you stir through pumpkin, walnuts and blue cheese until it forms a creamy sauce,” says chef Donal Skehan. “It’s proper autumnal food – seek out smaller, sweeter pumpkins with interesting textures and skin colours; they are far more flavourful than the regular large orange ones.” Autumn pasta with blue cheese and nuts Serves: 4 Ingredients: 1 pumpkin or autumn squash (about 1kg), peeled, deseeded and sliced 3-4 sprigs of thyme 1 tbsp olive oil 1 tbsp salted butter 2 onions, thinly sliced 350g pasta shapes, such as conchiglie or rigatoni 100g blue cheese 75g walnuts, toasted and roughly crushed Sea salt and freshly ground black pepper Best-quality extra virgin olive oil, to serve Method: 1. Preheat the oven to 200C/180C fan/400F/gas 6. 2. Place the pumpkin on a large baking sheet with the thyme sprigs and toss in the olive oil until all the pieces are coated. Season generously with salt and pepper. Roast in the oven for 40 minutes, or until tender and caramelised at the edges. Once cooked, keep warm. 3. While the pumpkin cooks, place a large heavy-based frying pan (skillet) over a medium-high heat and add the butter. Add the onions and season generously, tossing to coat completely in the melted butter. Reduce the heat and cook gently until the onions are sweet and caramelised, about 10-15 minutes. 4. Towards the end of the pumpkin cooking time, bring a large pan of water to the boil and generously season with salt. Once boiling, add the pasta and cook until al dente. Drain and reserve a cup of the starchy cooking water for use in the sauce. 5. Increase the heat back up under the pan with the onions, then add the reserved pasta water and bring to a steady simmer. Meanwhile, mash half the cooked pumpkin and add this to the onions. Crumble in almost all of the blue cheese (keep a little back to serve) and stir until you have a smooth, creamy sauce. Working quickly, add the pasta to the pan and stir through until completely coated. 6. Serve the pasta hot in warmed plates topped with the remaining pumpkin slices and blue cheese. Sprinkle with toasted crushed walnuts and top with a generous drizzle of the best-quality extra virgin olive oil you have to hand and a last seasoning of sea salt and black pepper. One-pot Moroccan-style meatballs “There are some recipes that are ideal for making ahead of time and seem to improve in flavour once you plonk them in the fridge for an overnight stay. This is particularly true of a tomato-based meatball stew like this one,” says Skehan. “The spices have an opportunity to mingle with the lamb, the harissa paste has time to develop the deep hum of heat in the sauce, and you are left with a pot of something truly special. “Make these meatballs while you have time on a Sunday night, and all you have to do to make a meal of them is serve them at the table with rice or couscous, and maybe some flatbreads.” If you don’t have a slow cooker, make this in a casserole dish and cook, uncovered, in an oven preheated to 160C/140C fan/320F/gas 3 for one hour. Serves: 4 Ingredients: 450g minced lamb ½ red onion, finely chopped 2 garlic cloves, crushed 1 medium free-range egg 2 tsp ras el hanout 30g fresh white breadcrumbs 1 tbsp finely chopped flat-leaf parsley 2 tbsp olive oil Sea salt and freshly ground black pepper For the sauce: 1 tbsp olive oil ½ red onion, finely chopped 2 garlic cloves, finely chopped 1 heaped tbsp harissa paste Grated zest of 1 lemon 400g tin chopped tomatoes 100ml chicken stock 400g tin chickpeas, drained and rinsed To serve: Handful of flat-leaf parsley, chopped Couscous, steamed Greek yoghurt Flatbreads, charred and torn Method: 1. In a large bowl, mix the lamb with the red onion, garlic, egg, ras el hanout, breadcrumbs and parsley. Season well and with wet hands, shape into 20 walnut-sized balls. 2. Heat the two tablespoons of oil in a frying pan or using the sauté function on the slow cooker and brown the meatballs all over. Transfer to a plate. 3. Now for the sauce. Add the one tablespoon of oil to the pan or slow cooker and gently fry the onion for five minutes, then add the garlic, harissa and lemon zest, and cook for one minute more. 4. Transfer to the slow cooker (if you’re not already using it), then add the meatballs. Pour over the chopped tomatoes and stock. 5. Season well and cook on high for four hours, then add the chickpeas and cook for a further 30 minutes. If the sauce is too juicy at the end, remove the meatballs and reduce to your liking in a pan or using the sauté function on your slow cooker. 6. Serve the meatballs and sauce scattered with parsley, with steamed couscous, a dollop of yoghurt and flatbreads. Irish coffee, hazelnut and chocolate tiramisu Tiramisu is one of Skehan’s “go-to desserts to feed a crowd”. He says: “This version is the latest twist and an homage to that favourite after-dinner treat: Irish coffee topped with whipped cream.” Serves: 6 Ingredients: 400ml double cream 250g mascarpone 4 tbsp caster sugar 75ml Baileys 300ml strong coffee 75ml whiskey 200g Savoiardi sponge fingers 100g hazelnuts, toasted and roughly crushed in a pestle and mortar 75g dark chocolate, grated Method: 1. Put the cream, mascarpone and sugar into a bowl and whisk by hand with a balloon whisk until it is thick and luscious. Whisk in the Baileys and set aside. 2. Mix the coffee and whiskey together in a shallow dish. Dip the sponge fingers into this mixture and put a layer of them into a glass serving dish. Spread over a third of the mascarpone mixture and scatter with a third of the nuts and chocolate. 3. Repeat to make two more layers, finishing with a layer of cream scattered with nuts and chocolate. Chill for at least two hours before serving. Lewis Hamilton has signed a new contract with Mercedes, extending his stay with the Silver Arrows until the end of 2025. The 38-year-old joined Mercedes from boyhood team McLaren in 2013 and has won six of his seven world titles under the guidance of boss Toto Wolff. George Russell, who joined as Hamilton’s team-mate in 2022, has also extended his deal to the end of 2025. Hamilton has been linked with Ferrari this season but the Brit has finally put all the speculation to bed by putting pen-to-paper on a fresh deal, reported to be in the region of £50m-a-year - a rise of approximately £10m. “We have never been hungrier to win,” Hamilton said after the contract was confirmed. “We have learnt from every success but also every setback. “We dream everyday of being the best and we have dedicated the past decade together to achieving that goal. “Being at the top does not happen overnight or over a short period of time, it takes commitment, hard work and dedication and it’s been an honour to earn our way into the history books with this incredible team. “We continue to chase our dreams, we continue to fight no matter the challenge and we will win again. I’m grateful to the team who have supported me both on and off the track. “Our story isn’t finished, we are determined to achieve more together and we won’t stop until we do.” Hamilton has not won a race since his contentious championship defeat to Max Verstappen at the 2021 season finale in Abu Dhabi - and is currently fourth in this season’s Drivers’ Standings. Giorgio Armani closed Milan Fashion Week with good vibes and a front row that included Cate Blanchett, Juliette Binoche and Lily Allen. Australian actor Blanchett – a global ambassador for Armani Beauty – championed sustainable fashion by wearing an embellished black jumpsuit with a plunging neckline. The outfit comes from Armani Prive’s autumn/winter 2009 couture collection, and Blanchett is obviously a fan – she previously wore it to the Palm Springs Film Festival in January. The palette captured the mood, moving from bronze on silvery grey to jewel blue, green and purples which bled together, and back to dusky shades of grey and silver which faded to white. “No beige,” Armani joked after the show. The collection conveyed elegance but also practicality: clothes that put the wearer at ease in any context and without prodding toward overt, revealing sexiness. Satiny trousers anchored many of the looks — jackets, transparent blouson layers, shimmering tops and off-shoulder chiffon dresses. “Vibrations, that means colours, that means movement, that means a structure that moves on the body,” Armani said. To demonstrate his vision, a model in a shimmering long dress and a diaphanous cape danced down the runway. Flat shoes finished all of the looks. “Women should not be enslaved to height or to a feline nature, being sexy at all costs,” the designer said. “There can be also a normal woman but who hopefully has a twinkle in the eye.” Armani for years has lamented a Milan fashion scene that tries too hard, focusing on novelty instead of what he sees as the essence of fashion: dressing women to express themselves. The designer said he sensed a change in this season’s Fashion Week, which ended on Sunday, with less frivolity. “Finally, I saw collections, from the photos, with a lot of normality. Attracting over 18 million tourists a year, Amsterdam has become the hot spot for travellers across the globe. Filled with tree-lined streets, picturesque canals and some of the finest culinary creations and art, the Dutch city has something for everyone – despite the stereotypes. Now, we can't speak about Dam without addressing the elephant in the room. You could be a foodie; an art enthusiast; a world traveller, or simply passing through the city on a connecting flight – but you'll inevitably be asked by friends, family and peers about your smoking habits – or lack of. Yes, it's legal – but it certainly isn't the be-all, end-all. In fact, tourists who have had the pleasure of visiting Amsterdam recently would have noticed the absence of smoke in the air, which is down to a newly enforced rule last month. There's much, much more to the beautiful, culturally enriched city. Museums Amsterdam does many things well, museums being one of them. The city is jam-packed with cultural experiences, from fine art to photography and history. Two days certainly won't get you through the array of galleries across the city, but there are two in particular that should not be missed. Moco Museum: Founded in 2016, the independent museum boasts a variety of modern, contemporary, and street art. Here, you will find pieces from Jean-Michel Basquiat, Banksy, Icy & Sot, JR, KAWS, Keith Haring, Jeff Koons, Damien Hirst, Tracey Emin, Yayoi Kusama, THE KID, Andy Warhol, Studio Irma, among many more. The Museum of Prostitution: While Amsterdam's sex industry remains open, there's still an air of mystery surrounding it. At the world's first prostitution museum, you will learn about the Red Lights Secrets through an interactive experience. Without giving too much away, the museum delves into the history of sex work in the city, what a typical room looks like and positive testimonials. It also does not shy away from the darker truths of the industry, such as trafficking and unsolved murder cases. Parks Vondelpark: Considered one of the city's most famous parks, this charming area makes the perfect destination to wind down from walking around the city after a long day. During the summer months, there's a host of activities, bandstands – and it even has its own Picasso sculpture hidden along the path. Food Dinner in the Pulitzer Garden: For the foodies, this al-fresco dining experience is a must. Inspired by modern-Dutch cuisine, it offers a wide range of impressive culinary creations and beautifully crafted cocktails. Health “guru” Dr Michael Mosley has offered his advice to those seeking to reduce their risk of developing osteoporosis, a condition characterised by weak or brittle bones. The medical expert and former doctor is known for his regular appearances on The One Show, as well as his TV programmes on health and medicine. Writing in his column for MailOnline, the creator of the 5:2 and Fast800 diets said he had found his bones were not as strong as they could be while filming a series about healthy ageing in 2022. “Like many Britons, my bones are weaker than they should be,” he wrote. “While filming a series about healthy ageing last year, I had a DXA scan, which uses low-dose X-rays to see how dense (or strong) your bones are. “Although I have a sturdy spine, my hip bones aren’t in great shape, though I don’t have osteoporosis.” Dr Mosley explained that the key to avoiding osteoporis involves getting a healthy intake of both calcium and Vitamin D, as well as a short but effective burst of exercise each day. “As well as obvious good calcium sources such as dairy and leafy green veg, you may want to top up on prunes,” he suggetsed. “A study last October in the American Journal of Clinical Nutrition, involing 235 older women, concluded eating five to six prunes a day improved bone density. The theory is that anti-inflammatory compounds in prunes may slow bone breakdown.” He also suggested that daily exercise could also help, citing a study that showed two minutes of hopping each day can improve hip bone strength. In 2020, Dr Mosley claimed that men were “more deluded” than women when it came to their own weight and fitness, while fronting a Channel 4 series to help people who had gained weight during lockdown. He told the Press Association: “An awful lot of people are unaware of how much weight they put on, particularly around the gut.” Research shows that only 10 per cent of people who are obese know they are but that the figure is only 7 per cent for men, Dr Mosley said, while “women are more aware of it”. He also denied that the show, which offers practical advice to overhaul viewers’ lifestyles, was about fat shaming: “Body shaming is awful. It is incredibly ineffective. Telling people they’re fat never, ever works,” he said. “None of this is about fat-shaming. It is entirely about helping people who are obese and who want to do something about it.
