
Get set for Wimbledon with these strawberry recipes
Wimbledon is underway and that means the classic British summertime treat of strawberries and cream is ready to be dished out across the courts, with a staggering 1.92 million strawberries expected to be consumed during the tournament. When buying strawberries, we are attracted to the deeper coloured fruits as they are the ripest, but it’s worth being mindful of when you plan to eat them as fully ripe strawberries are best served the same day. Always check the bottom of the punnet to see if the strawberries are starting to bruise as this is a sign they are beginning to be past their best. When it comes to cooking, if you overcook strawberries, you can get a jam-like taste rather than a freshness, so it’s best to use recipes that don’t require a lot of heat and keep it simple for a more refined flavour. Simple touches like adding a dash of lemon will help the strawberries to pack a punch and elevate any recipe. I also like to add a crack of pink peppercorn to macerated strawberries in whatever I’m using them for, this helps enhance the floral notes of the strawberries, as when you eat them the pepper helps open up the nasal passage. Final-worthy dessert: strawberry shortcake Ingredients: For the shortcake: 115g cake flour 5g baking powder 5g salt 3 eggs, separated 1 pinch cream of tartar 175g sugar 15g unsalted butter, softened 5g vanilla extract 125ml milk For the topping: 500g strawberries 1 lemon 75g caster sugar 1 pinch of ground pink peppercorns Method: For the shortcake: Sift and combine all the dry ingredients, then rub the butter into the flour mix. Whisk the egg whites and sugar together until they form medium peaks. Combine the egg yolks and milk with the dry ingredients. Separate into equal-sized balls and bake at 180ºC until golden. For the topping: Quarter or roughly dice the strawberries, cover with the sugar, pepper and lemon zest and leave to sit for 15-20 minutes in the fridge. To serve: Place a few of the shortcakes at the bottom of a bowl or on a large plate. Top with a dollop or two of whipped cream or thick yoghurt, cover with the fresh strawberries and drizzle with the strawberry syrup. Finish by crumbling a shortcake or two over the top. For extra flair: Baste the halves of two peaches and sear in a pan with beurre noisette and a sprig of thyme on a medium heat. Serve on the side of the strawberry shortcake. Quickly served treat: brioche with passion fruit and strawberries Ingredients: For the fruit mix: 500g strawberries 8 fresh passion fruits 60g caster sugar 1 pinch salt For the topping: 200g mascarpone 3 tbsp honey Zest of 1 lemon Brioche to serve Method: Scoop the passion fruit seeds into a small pan and bring to a gentle simmer on a low heat. Add the sugar and the salt and simmer for about 5-6 minutes, until the seeds are shiny. Remove from the stove and allow to cool for five minutes, then pour over your halved strawberries. Place them in the fridge to marinate. To serve: Slice the brioche with a generous thickness, and toast in a pan over a medium heat with a knob of butter, until golden. Flip and repeat. Mix the mascarpone, honey, and lemon zest, spread over the brioche and add a generous amount of the strawberry fruit mix. For extra flair: Roast a handful of pistachios and crush them slightly. The green of the nut against the rich red of the strawberries will add a punch of colour. Caribbean-inspired coconut and lime cheesecake
The first sweet things I ever made were cheesecakes – they provide endless opportunities to explore flavour and are easy peasy!” says chef and Great British Menu host Andi Oliver. “This particular iteration brings together the creaminess of white chocolate with toasty coconut and vibrant lime to sublime effect. Not too sweet, just right.” Coconut and lime cheesecake Serves: 12 For the base: 100g gingernut biscuits 100g oat biscuits, such as Hobnobs 50g desiccated coconut 120g melted unsalted butter Pinch of salt For the filling: 280g full-fat cream cheese 4 tbsp coconut condensed milk 200ml coconut milk 150ml cream Grated zest and juice of 2 limes 100g white chocolate, melted For the topping: 1 fresh coconut 1 tbsp maple syrup Grated zest of 1 lime 1 fresh mango, peeled, cored, and diced 22-24cm fluted tart tin, base lined with baking parchment Method: 1. Put all the biscuits in a sealable food bag and bash them up to fine crumbs using a rolling pin or similar. Tip the crumbs into a bowl and mix with the toasted coconut, melted butter, and salt. Press into the bottom and sides of the tart tin and chill in the fridge for one hour or until set. 2. Combine all the filling ingredients, apart from the chocolate, in a large mixing bowl. Beat together using an electric hand whisk until smooth and slightly thickened. Mix through the melted white chocolate. Spoon the filling on top of the set base and chill for a couple of hours in the fridge until set (do note that this cheesecake has quite a soft-set finish). 3. Meanwhile, preheat the oven to 180C fan. 4. Crack open the fresh coconut and peel off flakes of the flesh using a vegetable peeler. You want about two handfuls in total. Toss the flakes in the maple syrup and half of the lime zest on a baking tray, then toast in the preheated oven for around 10 minutes until crisp. Leave to cool, then top the cheesecake with the toasted coconut. 5. Mix together the diced mango and remaining lime zest and serve a little spoon of this alongside slices of cheesecake, or pile it on top of the cheesecake as well. Lewis Hamilton collided with Mercedes team-mate George Russell as Max Verstappen raced to pole position for Sunday’s Spanish Grand Prix. Hamilton will start fifth following a bizarre coming together with Russell, who lines up in 12th, at the end of Q2 at Barcelona’s Circuit de Catalunya. Verstappen finished four tenths clear of Ferrari’s Carlos Sainz, with Lando Norris an impressive third for McLaren. Pierre Gasly took fourth spot for Alpine, one place ahead of Hamilton, who was half-a-second back, with home favourite Fernando Alonso only ninth in his Aston Martin. Hamilton had to take on a replacement front wing for Q3 after he made contact with Russell in the closing stages of Q2. With both Mercedes men starting their hot laps, Hamilton moved out of Russell’s tow at 210mph on the main straight. But the seven-time world champion was forced to take to the grass after his team-mate, who was making his way past Sainz’s Ferrari, unintentionally, closed the door on him. Hamilton kicked up dirt from the grass as part of his front wing flew off his Mercedes. “George just backed off,” said Hamilton over the radio. “That is really dangerous. I might have some damage on the car.” Although Hamilton’s time was good enough to progress to Q3, Russell was eliminated in 12th. “You didn’t tell me there was a car behind,” said Russell. “I don’t know what the hell was going on in this session. The car was bouncing. I couldn’t get my tyres working. Russell will start one place behind Perez after the Red Bull driver also failed to make it out of Q2. Perez is Verstappen’s closest challenger in the championship but a week on from his horror show in Monaco where he finished 16th and two laps down, he qualified only 11th here. The Mexican ran through the gravel and, although he managed to keep his Red Bull out of the wall, his next lap was not quick enough to carry him through to Q3. “Unbelievable,” said Perez. On an afternoon of shock results, Charles Leclerc, who started this race from pole position last year, will line last but one on the grid. Leclerc complained about the rear of his Ferrari and finished above only Williams rookie Logan Sargeant in the order. “I don’t have the answers for now,” said Leclerc following his early bath. “The only thing I can say is the left-hand corners were undriveable.” Q1 was suspended by nine minutes following multiple spins on a track drying out after earlier rain. 7 tips and tricks for hay fever relief
Incessant sneezing, runny, red hot nose, dry itchy eyes and a banging head from wheezing all the time, it’s exhausting! So far it’s really proving to be far from a summer of fun for hay fever sufferers. While we love verdant trees, green grasses (grass pollen being the most common cause of hay fever coming into July) and flower beds to delight our bees and boost our picnic plans, the pollen plants release cause any number of allergic reactions. According to Allergy Ireland, about 25 per cent of all Europeans suffer some type of nose/sinus/chest allergy and this is set to rise to 50 per cent within the next decade Hay fever sufferers should have antihistamines handy and should visit their GP if things get really bad, but in the meantime, here’s how to help ease any irritation, at least a little… 1. Be prepared with an app My Pollen Forecast Pro UK is cited as one of the best apps for tracking the pollen count and your allergens. With a five day forecast, a diary feature to track your allergies and a live pollen map, at least it can help you prep for the great outdoors. Available on the App Store. The Asthma Society of Ireland offers a similar app with a pollen tracker for daily updates on pollen levels around Ireland, including a forecast and predictions for the following day. Plus it’s free. 2. Keep the windows closed Sunshine and blue skies? It’s only natural to want to throw open the windows. Unfortunately, this can let all those nasties in, so try to avoid opening them during peak pollen hours of late morning and late afternoon; and close them at night when there’s a high pollen count too. 3. Vaseline can help in various ways A godsend when you have dry lips, eyelids or cracked skin, Vaseline can also help soothe and protect your nose. Try smearing it inside each nostril to ease any soreness and catch pollen entering the nasal passages. 4. Take a cool shower If your eyes are streaming and you can’t stop sneezing, take refuge under the coolness of cold running water. Not only will it help ease symptoms, but you should wash your hair and change your clothing if you’ve been spending any length of time sitting or working outside. If a shower isn’t practical, put a cold facecloth on your face and lie down for a few minutes. 5. Used tea bags can help ease puffy eyes Make the most of your morning cuppa by putting used tea bags in the fridge and use them as a cold compress to help relieve any swelling and soothe sore, itchy eyes. Cucumber slices can work too. 6. Keep your face mask on Face masks have become so much the norm, you may as well use them to filter out particles of pollen. 4 signs you’ve eaten too much salt
Feeling the urge to glug a glass of water shortly after you’ve munched a packet of crisps, bowl of popcorn or handful of peanuts, is a clear sign your snack was on salty side – and that’s not necessarily a bad thing. “Salt is a necessary requirement to eat – and not for flavour,” says Pippa Hill, nutritionist and founder of The Weight Loss Guru. Table salt, aka sodium chloride, contains around 40% sodium, an essential nutrient. “Eaten in a small quantity, sodium helps the conduction of nerve impulses, muscle contraction and relaxation, and helps maintain the balance of water and minerals,” she continues. “A lack of salt can lead to muscle cramps, nausea, fatigue and light-headedness.” However, consuming more than the 6g a day recommended by the NHS for adults – equating to around one teaspoon – can be detrimental for your health. “A high salt intake disrupts the natural sodium balance in the body,” says Olivia Burley, registered associate nutritionist who is currently working on the NHS Diabetes Prevention Programme. This can result in high blood pressure, she explains: “Hypertension is a condition where blood pressure remains elevated over time, which can increase the risk of heart and circulatory diseases.” Unless you keep a very close eye on food labels, it’s not always obvious how much salt you’re eating in a day. “Examples of foods high in salt can be canned fish or poultry, frozen foods such as breaded meats, salted nuts, canned beans, cured meats, soup and sandwiches,” says Hill. And just because you’ve drunk enough water to quench your thirst doesn’t mean you’re negating the effects of too much salt, which is why it’s important to be aware of other health indicators. “If you are experiencing any or all these symptoms, it is always best to seek medical advice,” Burley advises. 1. Headaches The dehydration caused by excess salt intake can lead to severe headaches. “These headaches tend to be more painful than a mild one, giving a throbbing sensation as the blood vessels are being expanded,” Hill says. “They tend to come on between an hour or two after you’ve eaten, as sodium levels rise through the body.” They may come on quicker if you have high blood pressure or suffer from chronic headaches in general, but can often be solved by rehydrating. “As your water levels are imbalanced, by drinking more water you’re able to minimise and get rid of the headache.” 2. Swollen feet and hands Also known as edema, swelling of the fingers, ankles or feet can be a delayed reaction to a spike of sodium. “When too much salt is consumed, the body retains the extra sodium and increases the fluid outside of the cells, Burley explains. “This causes the kidneys to have reduced function, remove less water and therefore increase blood pressure.” Swelling may occur more when sitting down for too long or on long journeys. “This isn’t an instant response after eating, but if in the next 24 hours of having eaten salty foods you notice swelling in these areas, it could be a link,” Hill says. “It’s best to seek medical advice if this is an ongoing occurrence, as it could be a sign of a more serious health concern.” 3. High blood pressure “Salt is the largest cause of high blood pressure,” Hill warns. “Within just 30 minutes, eating excess salt will have a bodily reaction to the blood vessels.” Also called hypertension, if left untreated it can increase your risk of serious problems such as heart attacks and strokes. Hills says: “If after eating a salty diet, your symptoms include blurred vision, chest pain such as a tight feeling, palpitations, shortness of breath or sudden nosebleeds, it could mean you have a raised blood pressure.” Burley adds: “Hypertension can often have no symptoms and the only way to know your blood pressure is to get it monitored using a machine.” 4. Frequent urination “Excessive thirst is a common response to eating salty foods and naturally leads to an increase in fluid consumption, causing excessive urination,” Burley says.
