Tom Kerridge addresses backlash to his £35 fish and chips at Harrods: ‘They shout at me’
Tom Kerridge has defended charging £35 for fish and chips in luxury department store Harrods, explaining the quality of the ingredients and labour that go into the dish. The celebrity chef, 49, came under fire earlier this year for the costly dish at Kerridge’s Fish and Chips, which comprises of line-caught turbot and hand-cut potato chips. Some angry customers called the portion of fish “scrawny”, while others criticised the “thimbles of sauce” that accompanied the dish. But the Michelin-starred Kerridge – who has dealt with criticism of his prices in the past, including for an £87 sirloin steak in his Buckinghamshire pub – detailed the difference between his dish and a regular chippy’s fish and chips. Speaking to the Radio Times, Kerridge said that the backlash no longer affects him and he’s “learnt to deal with it”. “I’m seen as a man of the people, so when I put fish and chips on for £35, they shout at me for it being expensive,” he said. “But the people criticising me don’t understand how it’s priced. Fish and chips was always seen as cheap, fast food, and I get that because of where I grew up.” Kerridge went on to explain the supply chain behind a portion of fish and chips, saying: “The fish in most chippies is frozen at sea, in a big block, a year ago, then cut up and portioned. “The potatoes are maybe four weeks old, have gone through a chipper, been cleaned and put into cheap oil. They’re wrapped in paper, with malt vinegar and salt.” Kerridge clarified that he does “love” regular fish and chips, but that the dish he serves in Harrods is different. “At Harrods, it’s line-caught, day-boat turbot,” the Great British Menu judge said, referring to fish that is caught using traditional fishing methods by fishermen who go out to sea and return on the same day. “The potatoes are specifically sourced for their sugar and starch content, then individually cut up by a person. It’s bespoke dining in the most exclusive and beautiful shop in the world. Of course it’s expensive,” he added. In 2021, Kerridge defended the prices at his pub, arguing that they “include everything, VAT and service”. “No additional service charge at all. Also I pay staff properly and treat their job as a professional career. Perhaps the real cost of dining should be addressed,” he tweeted in response to a critic. “Unpretentious does not mean cheap. Also, why is profit a bad word?” Kerridge opened his first pub, The Hand and Flowers, alongside his wife Beth in 2005. Within a year, he had gained his first Michelin star. Since then, the TV personality has been given three Michelin stars, including a second for The Hand and Flowers, and the third for The Coach. He has appeared on numerous TV programmes such as MasterChef and Saturday Kitchen, and currently presents Food and Drink for BBC Two. Reusable bottles contain 'more bacteria than toilet seats'
Reusable water bottles tick many boxes. Not only do they help you stay hydrated and help save money, but they also help cut down on single-use plastic. They've almost become a fashion accessory, with chic stainless steel flasks and viral bottles going viral across TikTok. Sign up for our free Indy100 weekly newsletter Trying to hit the NHS-recommended eight glasses of water a day for adults is an excellent idea, of course, but did you know there’s one way your refillable bottle could potentially be detrimental to your health? According to a study from waterfilterguru.com, reusable water bottles contain an average of 20.8m colony-forming units (CFUs) of bacteria, which equates to 40,000 times more than the microbes on a toilet seat. So what might be the consequences if you continuously sip and refill without washing your bottle properly between uses? We asked health experts to talk through the risks… Bottling up bacteria “A common misconception when it comes to reusable water bottle hygiene is that as you’re typically filling it with pure water and it’s only coming into contact with your own mouth, there’s little need to clean it often,” says Dr Donald Grant, senior clinician at The Independent Pharmacy. However, every time you drink from the bottle, you’re transferring bacteria from your mouth, which can then multiply in the container. “Anything that is reusable can be prone to accumulating dirt, dust or debris and, as a result, bacteria,” says private GP Dr Suhail Hussain. “This is exacerbated by the fact water bottles are the ideal environment for harbouring bacteria due to being moist.” Hard-to-reach crevices – for example, inside a screw top or under a flip-up straw – could also develop mould, and then there’s contamination from other sources. “When you store it in a gym bag, for instance, it can pick up bacteria from the interior of the bag or anything else stored in it, while you can also transfer bacteria from your hands to your bottle,” says Grant. “If your bottle has a valve cap, you may need to lift or twist it with your fingers, and this can transfer bacteria you may have picked up from touching other objects or surfaces.” What types of microbes are found in water bottles? “These might be simple commensals such as streptococcus and staphylococcus, which normally live in symbiosis with their host (i.e. us) but can become problematic if they accumulate or the individual is under the weather,” Hussain says. “Bacteria such as E. coli – a common cause of urine and bowel infections – can often colonise the water bottle following repeated handling, such as taking the cap on and off.” These bacteria can potentially cause a variety of issues. “You may become sick and develop gastric illness, such as diarrhoea or vomiting,” Hussain continues. “Gram negative rods – another common bacterium found in unwashed bottles – can lead to urogenital tract infections and pneumonia.” Grant warns: “If there’s a build-up of mould inside the bottle, this can cause allergy symptoms, such as a runny nose, sneezing, or red and itchy eyes. Symptoms might be more severe for someone with asthma.” How often should you wash your reusable water bottle? “To minimise your risk of getting sick, you should ideally clean your water bottle after each use,” Grant says. “As a minimum, you should aim to wash it thoroughly at least a few times a week.” Hot water and washing up liquid are all you need to banish bacteria on a daily. “Fill the bottle with hot soapy mixture and swill around, or leave to soak in a detergent mixture,” Hussain advises. “Remember to pay special attention to lids/caps and screw top regions – use a clean brush [to scrub them].” If you’ve neglected your bottle for a few days and it needs a deeper clean, Grant suggests: “Soak your bottle overnight in a solution of half vinegar and half water. Rinse the bottle and let it dry fully before using it again.” Storage is also important to help minimise nasty microbes. “Where possible, you should keep your water bottle out of germ-rich environments such as your gym locker or sports bag,” Grant says. “You should also avoid filling your bottle with anything other than water, such as protein shakes, energy drinks, or sugar-rich liquids, as sugar can stimulate the growth of bacteria.” Hussain adds: “Don’t leave a water bottle in the sun for long periods or sitting in the cup holder in the car – the mixture of warmth and moisture is likely to make bacterial overgrowth worse.” Have your say in our news democracy. Kate Garraway’s husband Derek Draper admitted to hospital after MBE ceremony
Kate Garraway’s husband Derek Draper was admitted to hospital after she was awarded an MBE last week, the presenter has revealed. The Good Morning Britain host, 56, reflected on the “extraordinary day” she met the Prince of Wales at Windsor Castle with Draper watching from close by. Garraway, who was awarded the MBE for her services to broadcasting, journalism and charity, recounted an eventful week that “started with Derek in hospital and ended with Derek in hospital”. Draper, who is a former political advisor and author, contracted Covid-19 in March 2020, became critically ill and was put into a medically-induced coma. He still receives 24-hour care at home and is frequently in and out of hospital for treatments. “It was so wonderful to see Derek’s determination to be there, so kind of the Prince of Wales, to make it special for him & to recognise the work of Jake our incredible carer, who represents all those who make Derek’s daily life possible,” Garraway wrote in an Instagram post that was shared on Sunday (2 July). “Tomorrow Derek is back in hospital and of course the daily struggles go on – but the fact that he was able to be part of Wednesday is to be treasured & can’t thank everyone in the @NHS and all around him who love him for making it possible.” The couple have been married since 2005 and share two children, Darcey and Billy. Previously, Garraway spoke candidly about the reality of caring for her husband and said she has felt “frustrated, depressed and emotional” since he fell ill. The TV presenter became a full-time carer for Draper, alongside medical professionals. At the MBE ceremony, Garraway revealed that Draper “burst into tears” as she was awarded the honour by Prince William, who turned to wave at him as the former political advisor watched from his wheelchair. Garraway said: “Ah, I know, Derek burst into tears. The Prince of Wales said, ‘How’s Derek?’ and I said, ‘He’s here’. “[William] said he wants to go over [to Draper] but he’s not allowed to leave the rug, there’s a very fancy gold carpet that he stands on. “So we turned and saw and then obviously Derek was very tearful and then spoke about Jake [Draper’s carer] and gave Jake a wave as well,” she continued. Garraway has made two documentaries, Finding Derek and Caring For Derek, about her family’s journey navigating Draper’s illness. Both programmes won National Television Awards in the authored documentary category.
